Greek-style halloumi salad

This Greek-style halloumi salad is super easy to make, perfect for summer parties, picnics and BBQs. Serve it in pitta bread or as a side dish with grilled lamb, or on a buffet table.  You can add some sliced red onion and kalamata olives to this recipe – then you’ll get a traditional Greek salad with halloumi.

Ingredients
  

  • ½ cucumber
  • 200 g ripe baby tomatoes
  • 250 g halloumi
  • 2 Tbsp olive oil
  • Mint leaves
  • Dressing:
  • 2 Tbsp extra virgin olive oil
  • ½ tsp dried oregano
  • 1 clove of garlic minced
  • ½ lemon juiced

Method
 

  1. Wipe the cheese with paper towel and cut into 1 cm slices.
  2. Dry the halloumi with paper kitchen towel, then cut it into 2cm cubes. Heat the oil in a frying pan and fry the cheese on all sides until golden brown.
  3. Meanwhile, cut the tomatoes and cucumber into small cubes and put them in a serving bowl
  4. Mix the dressing in a small bowl.
  5. Transfer the halloumi cubes to a plate, lined with paper kitchen towel. When cool, add to the salad, season to taste and toss well.
  6. Serve the salad with mint leaves scattered on top.
