Ingredients

  • 4 lamb chops
  • 2 Tbsp olive oil
  • 1 red onion
  • ½ red or yellow pepper
  • 2 cloves of garlic
  • 1 tin or jar puttanesca sauce approx.
  • 1 handful cherry tomatoes
  • ½ cup black olives
  • Salt & pepper
  • Pinches of chilli flakes optional
  • 2 Tbsp Chopped fresh herbs to serve (parsley, coriander or mint)

Method

  1. Season the lamb.
  2. Thinly slice the onion, garlic and pepper.
  3. Heat half of the oil in a medium frying pan and seal the lamb on both sides, then transfer them to a plate.
  4. Pour away the fat, then add the remaining oil to the pan, then gently sauté the onion for 3 minutes. Add the garlic, pepper, chilli flakes (if used) and cherry tomatoes. Saute for another 5 minutes or so.
  5. Add the puttanesca sauce, cover and cook for 5 minutes, then add the lamb and cook for another 5 minutes. (If the sauce seems too thick add a drop of water or some passata.)
  6. Finally, add the olives, some fresh herbs and serve.
