Apple and blackberry crumble

This vegan apple and blackberry crumble is perfect at the end of an autumnal Sunday lunch. It’s very easy to make, super yummy and warming. Serve it with vegan custard, vanilla yogurt or ice-cream.

Ingredients
  

  • 200 g blackberries
  • 3 green apples
  • 1 tsp cinnamon
  • 2 Tbsp muscovado sugar
  • ½ lemon juiced
  • For the crumble:
  • 1 cup wholewheat flour
  • 1 tsp cinnamon
  • 75 g dairy-free margarin softened
  • ½ cup porridge oats
  • 2 Tbsp mixed seeds

Method
 

  1. Preheat the oven to 180°C.
  2. Peel and core the apples, then chop them roughly into bite-sized chunks.
  3. Scatter the apple and blackberries into an oven-proof dish. Squeeze the lemon over them, then sprinkle with cinnamon and the sugar.
  4. In a bowl, rub the margarine with the flour and cinnamon until you get breadcrumb-like crumbles, then add sugar, oats and seeds and make lumpy crumble.
  5. Cover the fruits with the crumble evenly, slightly pressing the top down with a spoon.
  6. Bake for 20-25 minutes until golden and crispy.
  7. Serve it warm.
