Plum and oat pancakes
These plum and oat pancakes are more healthy than the normal ones, as they are full of fibre. And you can use date syrup instead of sugar, to sweeten the sauce.

- First make the plum sauce. Put the flesh into a small pan, add the vanilla, cinnamon and sugar or date syrup. Add a dash of water and bring to the boil. When you gate a thick, almost jam-like sauce turn off the heat and let it cool.
- Put the oats and flour in a mixing bowl. Add the cinnamon and vanilla, then the oat cream and egg.
- Combine well.
- Add a couple of spoonful of the plum sauce and mix gently.
- Lightly grease a pancake pan and add dollops of the batter. Let them spread out into circles and cook for a couple minutes over low heat, until the surface is no longer runny. Flip them over and cook for another minute or so on the other side.
- Transfer them to a plate and make mora pancakes from the remaining batter.
- Serve the pancakes lukewarm with the plum sauce.
