Blackberry and Ginger Oat Slices
These blackberry and ginger oat slices are naturally sweetened with ripe bananas and apple, making them a simple breakfast or snack with no added sugar or oil. They’re also vegan and can easily be made gluten-free by using certified gluten-free oats.
The oats provide fibre to help keep you feeling full, while the blackberries add natural sweetness and a slight tang. Fresh apple keeps the slices moist, and a touch of ground ginger gives them a gentle warmth that works beautifully with the fruit. If you’d like to make them even more filling, you can stir in a handful of chopped nuts or seeds.
These slices are easy to make in either the oven or the air fryer and keep well, making them ideal for busy mornings, lunch boxes or an afternoon snack with a cup of tea.

- Preheat the oven or air fryer to 180°C. Line a small square baking tin with baking parchment or prepare a silicone mould that fits your air fryer.
- Mash the bananas and blackberries together with a fork until mostly smooth.
- Stir in the grated apple, oats, vanilla extract and ground ginger until well combined.
- If the mixture seems too wet, add a little extra oats or a couple of Tbsps of ground almonds or chopped walnuts.
- Spoon the mixture into the prepared tin or mould and spread it out evenly.
- Bake in the oven for about 25 minutes, or until the top is lightly golden and the mixture is set.
- Alternatively, bake in the air fryer for about 18 minutes.
- Leave to cool in the tin or mould before transferring to a wire rack. Once completely cool, cut into slices.
