The focus is on a smooth cashew and tomato gravy that brings creaminess without being too heavy, balanced with tamarind for a gentle tang.

Ingredients
  

  • 6 boiled eggs
  • 2 onions chopped
  • 2 green chillies
  • Tamarind half lemon sized soaked in water
  • 2 tsp Ginger-garlic paste
  • 1 tsp Turmeric
  • 1 sprig mint leaves
  • 1 tsp chilli powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1 Tbsp oil
  • Salt as required
  • Ground paste: 2 Tomatoes 5/6 cashews, water
  • Seasoning: 1tsp mustard seeds 1tsp Fenugreek seeds, a pinch of Asafoetida
  • A handful of coriander leaves

Method
 

  1. Heat oil in a deep bottomed vessel. Add the ingredients for seasoning. Let them splutter.
  2. Add the chopped onions and fry them until brown.
  3. Add the turmeric, ginger- garlic paste, green chillies and fry for a minute.
  4. Add the coriander powder, cumin powder and the mint leaves and fry for a minute. Add the ground paste and fry it on a medium flame until it is fried. Now
  5. Add the tamarind water, salt and chilli powder and boil for about minute.
  6. Garnish with coriander leaves and serve hot.
