Smoked salmon omelette

This is one of my favourite meals on a lazy weekend. It’s super-easy to make and the result is very satisfying  –  perfect dish for breakfast, brunch or easy supper. It’s also ideal for Mother’s day or Christmas morning – perhaps as part of a Champagne Breakfast.

Ingredients
  

  • 5 eggs
  • 2 slices of smoked salmon
  • 3 Tbsp natural or Greek yoghurt
  • Butter or margarine or oil
  • salt and pepper
  • grated Parmesan cheese optional
  • Chives chopped

Method
 

  1. Cut the salmon into 1 cm strips and mix with 2-3 tablespoons of yoghurt. Chill for half an hour, if you have time.
  2. Beat the eggs in a separate bowl (no need to add salt because the smoked salmon is salty enough).
  3. In a shallow pan fry the eggs in melted butter or oil for 1-2 minutes, stirring constantly, as if you were making scrambled eggs. When half- cooked, add the marinated salmon, spread evenly.
  4. Cook, under cover for 5-10 minutes. The omelette will rise a bit and will cook in the steam.
  5. Meanwhile: turn on the grill.
  6. Sprinkle with cheese and grill for about a minute until golden brown.
  7. Serve warm.
