Steak with spinach and blue cheese

This is a quick and easy meal that’s suitable for a laid-back dinner party or a special supper. Serve it with mashed potatoes. The blue cheese can be salty or sweet –  I like it with Gorgonzola and Stilton too.

Ingredients
  

  • 250 g spinach
  • 1 Tbsp créme fraiche
  • 1 Tbsp oil
  • 2 thick slices of sirloin steak
  • about 50g blue cheese
  • 4 Tbsp red port

Method
 

  1. Heat the oil in a frying pan. Season the steak on both sides with salt and fry it for 4-8 minutes depending on how well done you like it.
  2. Transfer the steak onto a plate, cover with foil and rest for 10 minutes.
  3. Meanwhile blanch the spinach in boiling water for 2 minutes, drain and squeeze the water out.
  4. Put the spinach back in the pan, add the créme fraiche, the grated nutmeg and crumble the cheese over it. Season to taste and stir. cover and keep warm.
  5. Heat the frying pan, add the collected juice of the meat and the port. Reduce it to a thick sauce.
  6. Place the steak on a serving plate, drizzle with the sauce and spoon some spinach mixture on top.
  7. Serve with some extra blue cheese scattered over it.
