Barbecued asparagus with feta

This barbecued asparagus with feta is a perfect side dish for BBQ parties, Sunday lunch or it can be eaten as a vegetarian/healthy main course with wholesome bread, quinoa, rice etc. It’s ready in just 10 minutes and the feta dressing can be prepared in advance.

Ingredients
  

  • 1 pack green asparagus about 250-300g
  • 1 tsp olive oil
  • 1 clove of garlic
  • 50 g feta
  • 1 tsp cumin seeds
  • 1 handful of fresh mint leaves chopped
  • Grated zest and juice of half lemon
  • Mint leaves to garnish

Method
 

  1. Crumble the feta into a bowl, add mint and the lemon zest & juice.
  2. Dry-fry the cumin seeds, when cooled, add the feta .
  3. Heat the barbecue or griddle pan.
  4. Snap off the woody ends of the asparagus.
  5. Pour the oil into a little bowl, mix in the crushed garlic.
  6. Rub each asparagus stalk with your garlic oil.
  7. Cook for 4-5 minutes until slightly charred, turning regularly.
  8. Arrange the asparagus on a serving plate and scatter the feta mixture over it. Season to taste and garnish with a few mint leaves.
