Steamed fish with leek and peas

In this recipe white fish fillet is steamed over braised leek and peas – making this dish a healthy meal – and it takes so little time to prepare! Serve it with brown rice, quinoa or couscous or just a slice of wholemeal bread. Absolutely delicious!

Ingredients
  

  • 2 white fish fillets e.g. haddock or cod
  • zest and juice of half a lemon
  • 1 small clove garlic
  • 2 tsp chopped parsley
  • 1 large leek
  • 100 g green peas
  • 150 ml vegetable stock
  • 2 tsp olive oil

Method
 

  1. Grate the lemon zest and mince the garlic, then mix together with the parsley. Set aside.
  2. Slice the leeks thinly.
  3. Heat the oil in a pan and sauté the leek gently until it’s tender. Add the peas and the stock.
  4. Bring to the boil and put the fish on top of the vegetables. Season to taste and sprinkle with the parsley mixture and half of the lemon juice. Simmer, under a lid, for about 5 minutes or until the fish is cooked through.
  5. Serve with the remaining lemon juice drizzled over it.
