Masala omelette
Masala omelette is a very popular dish in India, but there not just for breakfast. It’s a famous street food that’s popular day and night in Mumbai. There are many different recipes, this is a basic version – you can add more spices or veggies such as mushrooms, ginger, garlic or red pepper. It’s very easy to make, ready in a few minutes – so perfect for brunch or a snack. Serve it with a roll (or the Indian Pav).

- Beat the eggs.
- Chop the spring onions, chilli and tomato. Add to the egg.
- Add the spices, season to taste. Combine well.
- Heat the oil in a frying pan. Once hot, reduce the heat, add the eggs mixture and swirl around the pan for the mixture to spread evenly.
- When the egg is no longer runny in the middle and the edges are getting brown, flip over to cook on the other side for 30 seconds.
- Double fold as in the picture to create an envelope shape, or just roll it up like a pancake.
- Serve with a couple of slices of chilli and coriander leaves scattered on top.
