Lemon muffins

These lemon muffins are really zesty and yummy – fantastic sweet treats for parties, picnics and special occasions – or just with a cup of tea or coffee. They’re not only delicious but super-easy to make too. I’m sure you’ll love them!

Ingredients
  

  • 1 egg
  • ½ cup vegetable oil
  • ½ cup milk or almond milk
  • ½ cup sugar
  • Grated zest & juice of 2 lemons
  • 2 cups of self-raising flour
  • 1 tsp salt

Method
 

  1. Preheat the oven to 200°C. Line a muffin tin with paper cases.
  2. Mix the oil, egg, milk and sugar in a medium sized bowl. When the sugar has melted, add the lemon zest and juice.
  3. In a large bowl, mix the flour and the salt, then pour in the wet mixture. Gently combine with a spatula – do not over-mix the batter, it should remain a little bit lumpy.
  4. Fill the muffin cases two-thirds full with the batter.
  5. Bake in the oven for 20-25 minutes until light brown.
  6. Transfer the muffins onto a wire rack to cool.
