Spiced broad beans

If you like Middle-Eastern food you’ll love this Lebanese dish. It is perfect in a meze or, if you mash it slightly with a fork, you can serve it as a dip with flatbread. You can give these spiced broad beans a kick by using chilli flakes or cayenne pepper instead of ground paprika. Any leftover is perfect for a picnic!

Ingredients
  

  • 300 g broad beans podded
  • 1 small onion
  • 2 Tbsp olive oil
  • 2 cloves of garlic minced
  • 1 handful of coriander cilantro, chopped
  • ½ tsp paprika
  • 3 pinch ground allspice
  • ¼ tsp salt
  • Juice of half a lemon

Method
 

  1. Heat the oil in a large frying pan and fry the onion gently until soft.
  2. Add garlic and the chopped coriander, stir for 1 minute.
  3. Add the beans, spices, season with salt and pepper.
  4. Pour 1 cup of water over it and, under cover, simmer at low heat until tender (for about 15 minutes).
  5. When the water has almost completely evaporated, take off the lid, leave to cool.
  6. Add the lemon juice, sprinkle with paprika and coriander leaves.
  7. Serve it lukewarm or at room temperature.
