Brussels sprouts with bacon and chestnuts

Brussels sprouts are so much a part of a traditional Christmas dinner – yet so many people seem to detest them. They really can be very tasty if you combine them with other food that complement their bitterness. This Brussels sprouts with bacon and chestnuts is a delicious side-dish that goes well with roast turkey, goose or pheasant. Also, it can be made in advance and warmed up just before serving.

Ingredients
  

  • 1 Tbsp olive oil
  • 500 g Brussels sprouts
  • 100 g smoked bacon or lardons
  • 200 g shallot onions
  • 200 g roasted chestnuts peeled

Method
 

  1. Slice the bacon into thin strips.
  2. Clean the sprouts then blanche them in boiling water for 5 minutes. Drain, rinse with cold water, then drain again.
  3. Peel the shallots and cut them in half. Heat the oil in a frying pan then sauté them until soft and golden. Transfer to a plate.
  4. In the same pan fry the bacon pieces until crispy. Add the chestnuts, fry for 1-2 minutes. Add the sprouts & shallots, warm through.
  5. Serve warm.
