Lemon Christmas cookies

These lemon Christmas cookies can be hung from the Christmas tree or can be beautifully decorated and given as a gift to friends or family members. They’re really easy to make – and they taste zingy and fresh. You can make them with oranges too!

Ingredients
  

  • 200 g flour
  • 70 g icing sugar
  • 100 g butter or margarine diced
  • 1 egg lightly beaten
  • 1 lemon zest only
  • 1 tsp lemon extract

Method
 

  1. Sift the sugar and flour into a mixing bowl. Crumble the butter and flour together with your fingers until you get a mixture resembling breadcrumbs.
  2. Add the egg, lemon zest and lemon extract. Knead it into a firm dough.
  3. Make a ball shape from the dough and rest it in the refrigerator for 30 minutes.
  4. Preheat the oven to 180°C.
  5. Roll out the dough on a lightly floured surface to 5 mm thickness, then cut out shapes using cooking cutters. If you want to hang them, insert a hole in the top of each cookie using a straw or skewer.
  6. Bake for 10-12 minutes until lightly golden.
  7. Transfer the cookies to a wire rack to cool.
  8. When the cookies are cooled, dust with icing sugar or decorate them with icing or chocolate pens, etc. Alternatively dip them into a lemon glaze and sprinkle with edible glitter or silver balls etc. – then let dry.
