Christmas Biscuit salami
Though unbaked biscuit “salami” is originally an Italian sweet, it’s very popular in Middle & Eastern Europe during the Christmas period. Normally it’s a mixture of cocoa powder, sugar, butter, rum (or other liquor) and crumbled cookies, which is rolled into a log shape, chilled, then sliced. You can add nuts, dried fruits & spices to make it taste more festive – just like in this Christmas Biscuit salami version. It’s super easy to make, no baking is required – and the result is a real crowd pleaser! It also makes a nice gift if you’re going to a party!

Method
- Melt gently the butter in a saucepan. Add the sugar and cocoa powder.
- When the sugar is melted, add the egg and vanilla. Stir for 2-3 minutes. Before it boils, turn off the heat.
- Coarsely crush the biscuits then add to the mixture. Add the ginger and dried fruits, then gently stir.
- Put a large piece of baking paper on a clean surface and sprinkle half of the coconut over it.
- Spoon half of the mixture in the middle and form a 30 cm long log and roll this in the desiccated coconut to cover all over. Wrap with clingfilm, closing off the ends tightly.
- Repeat with the remaining mixture.
- Put the two salamis in the refrigerator and chill for at least 4 hours.
- Serve it sliced.
