Prawns in sorrel leaves

Sorrel leaves are rich in antioxidants, iron, vitamins and folic acid. They are rather sour but, with the combination of proper spices, have a very distinctive and delicious taste. This recipe for prawns in sorrel leaves is a good example of how palatable and tasty they can be.

Ingredients
  

  • 250 g Cooked prawns
  • 3 Big bunches of sorrel leaves Washed, blanched and puréed
  • 5 Green chillies
  • 1 Onion chopped
  • 6-7 Garlic pods crushed
  • 1 tsp Chilli powder
  • 1 tsp Mustard seeds
  • A sprig of curry leaves
  • 1 Tbsp Oil
  • Salt to taste
  • 1 Dry red chilli

Method
 

  1. In a deep bottomed pan, heat oil and add mustard seeds and let them splutter.
  2. Add curry leaves, dry red chilli and curry leaves.
  3. Add the chopped onion and fry until brown.
  4. Add the green chillies and garlic pods and fry for a couple of minutes.
  5. Add the ground sorrel leaves and the prawns and mix and fry for 5 minutes.
