Orange and yogurt loaf cake

If you want a simple cake for Easter or spring-time, do try this yogurt and orange loaf cake with honey and pistachios glazing! It’s absolutely delicious, looks gorgeous and even beginners can make it! It’s even more zesty and refreshing if you use lemon instead of orange!

Ingredients
  

  • 250 g flour
  • 100 g sugar
  • 100 g raisins
  • tsp baking powder
  • ¼ tsp salt
  • 1 orange zest and juice
  • 150 g Greek yogurt
  • 50 g butter
  • 2 eggs lightly beaten
  • 2 Tbsp clear honey
  • 30 g pistachios

Method
 

  1. Preheat the oven to 180°C.
  2. Melt the butter in a small pan, let it cool.
  3. Meanwhile, grease and line a loaf tin.
  4. In a large mixing bowl mix the flour, sugar, salt, baking powder, raisins and orange zest.
  5. In a separate bowl mix the yogurt, cooled butter and eggs. Add this to the flour mixture and stir it into a smooth batter.
  6. Transfer the batter to the tin, spread it out evenly.
  7. Bake for about 40 minutes until golden brown.
  8. Meanwhile, warm up the orange juice with the honey and chop up the pistachios.
  9. Remove the cake from the oven, test that it’s cooked through then pierce the top several times and pour over the glaze. Scatter the nuts on top and let the cake cool in the tin.
