Aubergine with lentils

Aubergines cooked with lentils give a mild taste and are a very good combination with steamed rice or roti. This dish can be made with just one or two left over aubergines.

Ingredients
  

  • ¼ cup Bengal gram dal Chana dal
  • 2 Aubergines Thin ones or 1 Big Aubergine, chopped
  • 1 Onion chopped
  • 1 Green chilli chopped
  • 1 ” Ginger chopped
  • ½ cup Water
  • Salt as required
  • 1 tsp Chilli powder
  • 1 tsp Oil
  • 1 tsp Turmeric

Method
 

  1. Pressure cook bengal gram dal with ½ cup water in pressure cooker according to your pressure cooker specifications and keep it aside.
  2. In a deep bottomed vessel, heat oil and add the onion, green chilli and ginger and fry until the onions are soft.
  3. Add the chopped aubergine and fry until they are cooked.
  4. Add the cooked bengal gram dal (and the water if left over from cooking in pressure cooker), salt and turmeric and simmer until all the water is evaporated.
  5. Serve hot with steamed rice.
