Healthy banana and walnut muffin

This is  Healthy banana and walnut muffin is a variation on one of the classic muffins. Here we use whole wheat flour and oatmeal, also a much reduced amount of sugar. It’s perfect for those who are on a diet and/or are health-conscious. They will stay moist for a couple of days if kept in a cake tin.

Ingredients
  

  • 1 cup whole wheat flour
  • 1 cup oatmeal
  • ½ tsp baking soda
  • 2.5 tsp baking powder
  • ½ cup unrefined sugar
  • 3 ripe bananas
  • 1 cup walnut kernels chopped
  • 2 medium eggs
  • ¼ cup vegetable oil cold pressed
  • 4 Tbsp buttermilk or oaty cream
  • ½ tsp ground nutmeg
  • ½ tsp ground cinnamon
  • 1 tsp vanilla essence
  • To garnish: walnut pieces

Method
 

  1. Preheat the oven to 180°C.
  2. Mash the bananas with a fork.
  3. Mix the dry ingredients in a bowl.
  4. In another bowl mix the eggs, buttermilk, oil and vanilla extract. Combine the two mixtures, then mix in the chopped walnut pieces and the mashed banana.
  5. Line a muffin tin with paper cases, then fill them with the batter.
  6. Sprinkle some crushed walnuts on the top.
  7. Transfer them to a wire rack to cool.
