Healthy apple pancakes
A healthy breakfast can really set you up for the day! So why don’t you try these delicious, healthy apple pancakes, which are made with oats, cinnamon and sultanas? Here I used gluten-free flour and oatmeal but you can use normal wheat flour, if gluten is not an issue for you. Also, instead of sultanas, you can use other dried fruits – such as chopped apricots, blueberries, cherries and cranberries. I served it with Greek yoghurt mixed with maple syrup, but you can serve it with a fruit compote, honey or agave syrup drizzled on top, if you like!

- Mix the flour, oatmeal, cinnamon and baking soda then add the egg. Mix until combined.
- Add the oil, apple and enough yogurt to get a thick pancake batter. Fold in the sultanas.
- Oil a pancake pan or a heavy-based frying pan, then drop large spoonfuls of batter into the pan , creating circles. They should be about 5- 6cm across. Cook for 1-2 minutes on each side until golden then transfer them to a plate.
- Serve with you choice of topping.
