Red pepper and chorizo tarts

These easy, yet yummy, red pepper and chorizo tarts or tartlets are excellent for a laid-back lunch or if you have guest around. You can make 10 tarts or 15 tartlets out of one sheet of puff pastry –  they make perfect party nibbles or tapas. I used homemadetomato and chilli chutney, but you can use any shop-bought ones, or even pizza sauce, if you like.

Ingredients
  

  • 1 Tbsp olive oil
  • 1 red onion
  • 2 sweet Peppers
  • 1 pack of ready-rolled Puff Pastry
  • 5 Tbsp spiced tomato chutney
  • about 10 chorizo slices
  • 2 Tbsp pine nuts
  • Grated cheese optional

Method
 

  1. Thinly slice the onion. Deseed and thinly slice the pepper.
  2. Heat the oil in a large frying pan and gently cook the onion and pepper for 10-15 minutes until soft. Turn off the heat and mix in the chutney.
  3. Preheat the oven to 200ºC.
  4. Unroll the pastry onto a chopping board (keep the packaging sheet underneath) then cut into 10/12 rectangles or 15 squares. Transfer these to a large, lined baking sheet (you might need 2 trays).
  5. Spread the onion and pepper mixture over the tarts. Cut the chorizo slices and arrange these on top (2/ larger tart, 1/small tartlet) . Scatter the pine nuts ( and the cheese, if used) on top.
  6. Bake for 15-20 minutes until golden brown and cooked through.
  7. Serve with a salad as a meal, or scatter some fresh herbs, watercress or rocket over them.
