Exotic fruit salad

This super easy, raw exotic fruit salad is not only sweet and delicious but very healthy too! Ideal for a special breakfast – or you can serve it as a healthy dessert with Greek yoghurt or crème fraîche. For a more intense flavour, add some zested lime mixed with a spoonful of coconut cream to the crème fraîche and you get a truly scrumptious pudding! I used 5  different exotic fruits – but you can add or replace them with other fruits such as kiwi, mandarin, banana and so on. If you don’t have fresh coconut shavings, use some healthy nuts or seeds instead.

Ingredients
  

  • 1 persimmon
  • 5 lychees
  • ½ mango
  • ¼ pineapple
  • 2 Tbsp pomegranate seeds
  • Shavings of fresh coconut
  • 1 Tbsp honey
  • Zest and juice of 1 lime
  • Mint leaves to garnish optional
  • 2 Tbsp crème fraîche or Greek yoghurt optional

Method
 

  1. Dry-toast the coconut if you like and set aside.
  2. Peel and chop the flesh of the fruits into bite-sized pieces and put them in a large bowl ( collect the juices and add this to the salad).
  3. Mix the lime zest and juice with the honey and pour over the salad.
  4. Add the coconut and pomegranate seeds and toss well. Serve with a few mint leaves scattered on top and a dollop of yoghurt or crème fraîche.
