Red cabbage and orange salad

This easy red cabbage and orange salad is perfect for the festive season. Serve it in a turkey or ham sandwich and you’ll be in heaven! Almost as celestial is to serve it with roast duck, goose, chicken or Turkey – or put it on a buffet table at parties during the winter festivities.

Ingredients
  

  • 1 small or ½ medium red cabbage
  • 1 organic orange
  • 1 apple
  • 1 handful of walnuts
  • 2 Tbsp balsamic vinegar
  • 1 Tbsp olive oil
  • 50 g stilton optional
  • 2 Tbsp chopped parsley

Method
 

  1. Dry-fry the walnut and set aside. Zest the orange then peel and cut it into segments. Core and slice the apple.
  2. Remove the core of the cabbage then thinly slice.
  3. Heat the oil in a frying pan. Add the cabbage, then pour over the vinegar. Stir and put the lid on. Cook for about 10 minutes until the cabbage softens. Add the orange zest and segments, the apple slices, then crumble over the walnut. Cook for 5 more minutes. Season with salt and pepper and add the parsley.
  4. Scatter with the cheese just before serving.
