Celeriac and Broccoli Soup
This Celeriac and Broccoli Soup is excellent for those watching their calorie intake (only about 60 kCals per portion). At the same time it’s extremely tasty and satisfyingly filling, so it can also be a dinner party first course. I’ve given directions below using a pressure cooker because its quicker, more economical and (I think) packs in more flavour, but if you don’t have one just cut up the vegetable more finely and simmer (stirring frequently) for about 30 minutes.

- Spray the oil into the pan over a medium heat. Add the garlic and onion (both finely chopped). Stir for 2 or 3 minutes to soften.
- Meanwhile p the celeriac then roughly chop it and the broccoli. Add to the pan and pour in the stock. Season to taste.
- Bring to the boil and cook under pressure for 10 minutes.
- Allow to cool by itself then remove the lid and use a hand blender to create a potage.
- Sprinkle with fresh herbs of your choice and serve.
