Tomato and spring onion salsa

I love this tomato and spring onion salsa because it’s super simple and ready in five minutes. Also, it goes really well with many types of dishes –  grilled/barbecued meat and fish, cold meats, cheeses, nibbles etc. It makes an excellent filling, too, in tacos, sandwiches and wraps. If you blend it together coarsely, it becomes a delicious dip or sauce that you can pour over grilled meat. Perfect for picnics, parties or in your lunchbox as well!

Ingredients
  

  • 2 ripe tomatoes or 1 handful of ripe cherry tomatoes
  • 5 spring onions
  • 1 garlic minced (optional)
  • 1 handful of Coriander leaves
  • ½ green chilli deseeded
  • Juice of ½ lime approx
  • 2 Tbsp olive oil
  • 1 pinch of cumin powder
  • 1 pinch or dried oregano

Method
 

  1. Finely chop the tomatoes, spring onions and coriander, then put them in a serving bowl.
  2. Mix the oil with the lime juice. Add the garlic, if used. Add cumin powder and oregano, season to taste. Adjust the dressing to your liking.
  3. Pour the dressing over the salad and toss well. Taste and adjust the dressing to your liking (it might need a drop more lime juice for example).
