Papaya and Lime Chutney
Mango chutney is probably one of the world’s most popular condiments and I’ve made it many times, but I felt like a change and experimented with this papaya and lime chutney. It turned out to be really tasty, a very pleasing variation on the mango theme – though not quite as fruity, it still has a great flavour. It will keep for a week or so in the fridge or for much longer if you store in a cool place usingsterilized jars.

- Peal and chop the papaya, onions and garlic. Zest of the limes and squeeze out the juice of both.
- Heat a heavy-bottomed pot over a medium flame, add the vinegar and stir in the sugar.
- When the sugar has dissolved, bring it to the boil, add the other ingredients and mix together thoroughly.
- Reduce to a simmer. Stir well every few minutes, making sure it doesn’t stick on the bottom as it thickens.
- It should be ready in about 40 minutes (see Tip). Allow it to cool down a bit putting into jars.
