Healthy crunchy slaw

This Healthy crunchy slaw is ready in just 10 minutes – perfect side dish for frilled/barbequed steak or makes an excellent filling in kebabs, sandwiches and burgers. I added some chilli to give it a kick, but it’s not essential. I used skyr, which is a super healthy Nordic cultured yogurt, similar to Greek yogurt.

Ingredients

  • 1 carrot
  • 1 cup shredded white cabbage
  • 1 cup shredded celeriac
  • 1 bunch spring onions
  • 1 handful of radish
  • ½ red chilli optional
  • 3-4 Tbsp Skyr or Greek yoghurt
  • 1 Tbsp olive oil
  • 1.5 tsp cider vinegar
  • 1.5 tsp lemon juice
  • 1 Tbsp toasted sesame seeds
  • Salt & pepper

Method

  1. Thinly slice the radish then cut them into matchsticks.
  2. Shred the celeriac and cabbage, then thinly slice the spring onions (green parts too).
  3. Mix all these in a large bowl, then add enough yogurt to combine.
  4. Add the oil, vinegar & lemon juice. Season with salt and pepper, sprinkle half of the sesame seed.
  5. Let it rest for 10 minutes and taste. Adjust the acidity, by adding more lemon juice or cider vinegar if needed.
