Sprout and Celeriac Soup
This Sprout and Celeriac Soup is so simple yet so delicious! It’s also excellent for those on the 5:2 or other diets as it works out at less than 20 kCal/100g! I normally use a pressure cooker which means it’s ready much quicker and intensifies the flavour. If you use a normal pan you’ll need to simmer, stirring frequently, for about half an hour.

- Peel & chop the onion & garlic. Clean and chop the broccoli & sprouts. Peal and chop the celeriac.
- Spray the oil into the pan over a medium heat then add the onion & garlic – stir for a minute to soften.
- Mix in the vegetables, then pour in the stock. Bring to the boil stirring well.
- Put on the lid and pressure cook for 10 minutes then allow to cool.
- Use a hand blender to create a smooth soup.
- If your diet allows, serve crusty bread.
