Sprout and Celeriac Soup

This Sprout and Celeriac Soup is so simple yet so delicious! It’s also excellent for those on the 5:2  or other diets as it works out at less than 20 kCal/100g! I normally use a pressure cooker which means it’s ready much quicker and intensifies the flavour. If you use a normal pan you’ll need to simmer, stirring frequently, for about half an hour.

Ingredients
  

  • 3 g Garlic 4 kCal
  • 75 g Onions 26 kCal
  • 120 g Broccoli 40 kCal
  • 300 g Brussels Sprouts 105 kCal
  • 10 g oil spray 10 kCal
  • 440 g Celeriac 79 kCal
  • 1 litre Veg Stock 70 kCal

Method
 

  1. Peel & chop the onion & garlic. Clean and chop the broccoli & sprouts. Peal and chop the celeriac.
  2. Spray the oil into the pan over a medium heat then add the onion & garlic – stir for a minute to soften.
  3. Mix in the vegetables, then pour in the stock. Bring to the boil stirring well.
  4. Put on the lid and pressure cook for 10 minutes then allow to cool.
  5. Use a hand blender to create a smooth soup.
  6. If your diet allows, serve crusty bread.
