Stilton and walnut stuffed mushrooms

Stilton and walnuts traditionally go hand-in-hand, so it’s no surprise that these Stilton and walnut stuffed mushrooms  are absolutely delicious. You can serve them as a starter or a vegetarian main course (with a green salad) –  I like serving it as a side dish with steak.

Ingredients
  

  • 4 large mushrooms
  • 30 g walnuts
  • 1 Tbsp breadcrumbs or coarse polenta
  • 1 clove of garlic minced
  • 50 g Stilton
  • 1 Tbsp thyme leaves
  • 1 egg beaten
  • 1 Tbsp olive oil

Method
 

  1. Preheat the oven to 200°C.
  2. Separate the stems from the caps of the mushrooms, and chop these finely. Chop the walnuts roughly.
  3. In a mixing bowl, mash the cheese with a fork, then add the egg & breadcrumbs. Add the walnuts, chopped mushroom stems, thyme and garlic, then combine.
  4. Fill the mushrooms with the stuffing.
  5. Grease a baking tray with a drop of oil, then place the stuffed mushroom in it.
  6. Season with salt and pepper, then drizzle with the oil.
  7. Bake for 15-20 minutes until the cheese has melted.
  8. Serve hot.
