Celery and Celeriac Soup
It’s strange that two such simple and similarly subtly flavoured vegetables can result in such satisfyingly tasty meal as this celery and celeriac soup! It’s easily made and, as prepared below, it’s under 50 kCal per portion or about 10 kCal/100g. Just triple the simmering time and stir frequently if you’re not using a pressure cooker.

- Peel the celeriac and onions. Trim the base from the celery – remove but retain the leaves.
- Cut the vegetables into chunks and put into the pot.
- Add the stock, bay leaves ans seasoning.
- Bring up to pressure, cook for 25 minutes and allow to cool.
- Season to taste and serve garnished with the celery leaves.
