Celeriac and carrot mash

One of my favourite side dishes is a mash – but not just mashed potatoes, I like most root vegetables mashed too, so I experiment with different combos.  This celeriac and carrot mash works well – depending on the main dish  I serve it with fresh green herbs, such as parsley, coriander, dill, basil or chives. Sometimes I add some grated nutmeg or a pinch of paprika/cayenne too.

Ingredients
  

  • 1 medium celeriac
  • 3 medium carrots
  • 2 Tbsp chopped fresh herbs of your choice flat leaf parsley, coriander or basil
  • Couple of knobs of butter or 1 tbsp dairy-free spread

Method
 

  1. Peel the vegetables than cut them into 3 cm chunks. Put them a large pan and cover with cold water. Bring to the boil and simmer for 15-20 minutes until tender.
  2. Drain and return to the pan. Add the butter or spread and mash ( using a potato masher or hand-held blender). Season to taste and stir through your chosen herb.
  3. Serve warm.
