RIP chocolate pots

A Halloween party cannot feel complete without somechocolate graveyardorspooky brownies. This year I made individual RIP chocolate pots, without any eggs. These little pots are really quick & easy to make – and you can be as creative as you wish with the decorations. Also, you can use gluten-free biscuits if required. I added some dried cranberries and crumbled cookies to the mousse – you can add mini marshmallows  for a more gooey version, or little spooky gums or crumbled nuts for a textured version.

Ingredients
  

  • 300 ml double cream
  • 150 g good quality dark chocolate
  • 2 Tbsp vanilla sugar optional
  • Oval or rectangular tea biscuits/cookies
  • Chocolate pen
  • Dark chocolate shavings coco powder or chocolate sprinkles
  • Dried fruits cranberries, raisins etc

Method
 

  1. Put the chocolate in a glass bowl. Put the bowl in a steamer and melt over simmering water ( make sure the bottom of the glass bowl doesn’t touch the water).
  2. When the chocolate has melted, take it the heat and add ⅔ Tbsp of double cream and mix well (add some marshmallows now, if you like a gooey version). Let it cool a bit.
  3. Meanwhile, whip the cream (and sugar, if used) until soft peaks form – it should be fluffy, must not be stiff!
  4. Gently fold the chocolate in the cream.
  5. Spoon the mousse into the glasses. Cover the top with cocoa powder, chocolate sprinkles or shavings.
  6. Using the chocolate pen, write RIP on 4-6 cookies – push these gently into the mousse, and dust the “graveyard” with cocoa powder.
  7. Serve immediately or chill until needed.
