Tomato rice

This is a simple and flavorful dish made with only few ingredients. This can be made in a pressure cooker or a pot. Since it is quick to make, one can prepare this for dinner on a busy week day or for a lunch box. It can be served plain or with some vegetable salad, curd or papad. To make it kid`s friendly you can purée the tomatoes. As the name indicates this dish is made using just tomato and no vegetables are used except onion. I have used carrots and capsicum to make it kid`s friendly. One can use any kind of rice to make it.

Ingredients
  

  • 2 cups raw rice washed & drained
  • 2 Tbsp oil
  • 1 tsp cumin seeds
  • 1 medium sized onion thinly sliced
  • 1 green chilli
  • 2 tsp ginger garlic paste
  • 1 cup ripe tomatoes chopped or puréed if preferred
  • Salt to taste
  • ¼ tsp turmeric powder
  • 1 tsp red chilli powder
  • 1 tsp garam masala
  • 4 cups water
  • 1 carrot chopped optional
  • 1 capsicum chopped optional
  • 1 bunch chopped coriander leaves for garnishing

Method
 

  1. Heat pressure cooker with oil.
  2. Add the onions and fry them until gold.
  3. Add ginger garlic paste and sauté for a minute.
  4. Add tomatoes, carrot, capsicum, salt, turmeric. Saute for 2 minutes.
  5. Cook covered until soft. Add red chilli powder and garam masala powder.
  6. Mix and cook until the mixture turns soft and mushy.
  7. Pour water and stir. Check salt, if needed add more.
  8. Bring the water to a rolling boil, add the rice.
  9. Stir and cover the cooker with lid. Cook on a medium heat.
  10. When done remove from heat and allow it to cool.
  11. Open the lid and fluff up the rice.
  12. Transfer to a serving bowl and garnish with chopped coriander leaves.
