Orange, honey and cinnamon baked sweet potatoes

For a festive side dish I highly recommend these orange, honey and cinnamon baked sweet potatoes. It’s a very simple recipe yet it goes superbly with roast chicken, turkey, goose and gammon – also you can use it for warm, hearty salads during the winter months. I used orange blossom honey, but other kinds of honey would work too (in which case add some grated zest to the glaze).

Ingredients
  

  • 2 big sweet potatoes peeled and cut into 1-inch cubes
  • 2 Tbsp olive oil
  • 2 Tbsp honey orange blossom
  • 1 tsp ground cinnamon
  • Juice and zest of ½ orange
  • Salt and freshly ground black pepper

Method
 

  1. Preheat oven to 180°C.
  2. Cut the sweet potatoes into 3 cm chunks (no need to peel them if they are organic). Scatter them in a roasting tray.
  3. Mix the oil, honey, cinnamon and orange juice. Brush the sweet potatoes with this glaze, then season with salt and pepper.
  4. Roast for 25 to 30 minutes in oven or until tender.
  5. Serve warm as a side dish or mix it with a salad.
