Stir-fried Shiitake mushrooms and green beans

Shiitake mushrooms are healthy, tasty and ideal for many Asian-style dishes. If you need a quick and easy side or vegan dish, do try these stir-fried Shiitake mushrooms and green beans. Ready within just 10 minutes. They also fit perfectly in a menu celebrating Chinese New Year!

Ingredients
  

  • 1 Tbsp groundnut oil
  • 1 onion peeled
  • 1 clove of garlic peeled
  • 2 cm ginger peeled
  • 150 g Shiitake mushrooms
  • 2 Tbsp soy sauce
  • 2 Tbsp Shaoxing rice wine or dry sherry
  • 200 g green beans
  • 1 tsp toasted sesame oil
  • 1 tsp toasted sesame seeds

Method
 

  1. Finely slice the onion, ginger and garlic. Cut the mushrooms into chunks and the beans into 3-4 cm pieces.
  2. Heat the oil in a wok over medium-high heat. When it’s smoking hot, add the onion and stir-fry for 3 minutes until brown then add the garlic and cook for 30 seconds.
  3. Add the mushroom, stir fry for a minute then add the rice wine and soy sauce. Add the beans, turn down the heat and put a lid on.
  4. Saute for 3 minutes, until the beans are tender.
  5. Stir in the sesame oil.
  6. Serve with some sesame seeds sprinkled on top.
