Paneer capsicum stir fry

Paneer capsicum stir fry, a great combination of paneer (cottage cheese) and capsicum stir fried with other herbs to give the special taste. The recipe is a prominent North Indian curry that is almost a part of their everyday cooking. This is quick and easy to prepare at home and is the best go- to recipe on a busy day.

Ingredients
  

  • 2 cups paneer cubes
  • 2 medium sized capsicum diced
  • 2 onions cut into medium sized pieces
  • 2 Tbsp oil
  • ¼ tsp turmeric powder
  • ½ tsp red chilli powder
  • 1 tsp coriander powder
  • ½ tsp cumin powder
  • 1 tsp garam masala
  • 2 green chillies chopped finely
  • 1 tsp ginger garlic paste
  • 1 tsp dry fenugreek powder
  • Salt to taste

Method
 

  1. Heat oil in a broad non-stick pan, add paneer cubes and sauté on a low flame for 2 minutes. Remove from heat and set aside.
  2. In the same pan add ginger garlic paste and sauté for a minute. Then add onion and capsicum and mix well.
  3. Add chopped green chillies, turmeric powder, red chilli powder, coriander powder, cumin powder, garam masala powder and salt.
  4. Cook on a medium flame for 5 minutes, while stirring occasionally.
  5. Finally add the paneer cubes, mix gently and cook on a medium flame for one minute.
  6. Add dry fenugreek powder and remove from the heat.
  7. Serve hot with flavored rice or roti.
