Fruity Earl Grey Tea Loaf

We were visiting some old friends in the country last weekend and I remembered they were both very fond of fruit bread. So on Saturday night I just popped the ingredients into my trusty bread machine, set the timer and in the morning took out this fine-looking Fruity Earl Grey Tea Loaf to take as a gift. It was very gratefully received and rather delicious! It’s particularly nice with cheese, with butter and jam for afternoon tea or just enjoy it by itself.

Ingredients
  

  • 1 tsp Yeast
  • 400 g Strong Wholemeal Flour
  • 75 g Butter
  • 2 medium Eggs
  • 2 tsp Sugar
  • 1 tsp Salt
  • 2 tsp Cinnamon
  • 1 tsp Mixed Spice
  • 110 mL Earl Grey Tea
  • 110 mL Milk
  • Additional Ingredient Auto/Manual:
  • 150 g Mixed Dried Fruit

Method
 

  1. First make the tea – either in a small pot with tea-leaves or just a tea-bag in a cup – and allow 5 minutes properly to brew.
  2. If you choose to chop up your own dried fruit mixture you can do so now while the tea brews.
  3. Add all the ingredients to your breadmaker pan in the order above ( or as per the manufacturer’s instructions).
  4. Put the chopped fruit into the automatic dispenser (or add manually when indicated by your machine)
  5. Select the medium wholemeal loaf programme (about 5 hours) and start.
