BBQ veggie and pasta salad

When I have the barbecue going in the summer, I always grill some extra vegetables for later use. Bell peppers, onions, garlic bulbs, aubergines can be put straight on the BBQ, without any preparation whatsoever. When they are done just let them cool, remove the skin and the flesh can be used for lots of lovely dishes. This barbecue pasta salad is a perfect example – it’s ready within 10 minutes and it’s absolutely delicious. Served with a crispy salad, it’s ideal for a lazy summer lunch or supper.
