Ingredients

  • 6-8 chicken thighs/drumsticks
  • 1 tsp olive oil
  • 1 tbsp spicy chipotle paste
  • 2 tsp tomato puree
  • 1 tsp dried coriander
  • 1 garlic minced or ½ tsp garlic powder
  • Juice & grated zest of 1 lime
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • ½ tsp ground pepper

Method

  1. Put the chicken pieces into a freezer bag.
  2. Mix the remaining ingredients in a small bowl until you get a smooth paste. Pour this over the chicken, tie the bag and massage the paste all over the chicken pieces with your fingers. Make sure they are well coated. Marinate in the fridge for minimum 30 minutes – ideally for 2 hours or overnight.
  3. Heat your BBQ or grill, set to medium flames. Place the chicken pieces on the grid and gently cook until lightly charcoaled. Make sure the chicken is cooked through properly.
  4. Serve warm or at room temperature.
