Spiced carrot and pea soup
On cool, late summer evenings I love sipping on some warm yet delicate soup like this minty spiced carrot and pea soup. It’s so easy to make too! The soup is a bit sweet so it’s ideal for kids. Serve with crusty bread and/or a dollop of crème fraîche if liked.

- Peel then finely chop the onion, garlic and ginger.
- Roughly chop the carrots.
- Heat a Tbsp of oil in a large pan, add the chopped veggie and gently sauté for 10 minutes, under cover.
- Add the stock, bring to the boil and cook for 10 minutes, until the carrot is tender. Add the peas and cook for another couple of minutes.
- Turn off the heat, add the mint and lemon juice. Whizz with a stick blender until smooth.
- Taste, season with salt and pepper and serve with some mint leaves garnished and a squeeze of lemon.
