Bitter gourd fry

Did you know bitter gourd is a fruit not a vegetable. This fruit has wide range of health benefits. It is excellent source of dietary fiber and important nutrients like iron and vitamin c. This is dish is a very simple stir fry which goes well with rice and ghee. Also makes a delicious side dish for rasam.

Ingredients
  

  • 250 g tender bitter gourd
  • 1 medium sized onion
  • 1 tsp grated jaggery
  • 1 tsp tamarind juice
  • A pinch of turmeric powder
  • 1 tsp chilli powder
  • 2 Tbsp oil
  • 1 sprig curry leaves
  • ½ tsp coriander powder
  • ½ tsp cumin powder
  • Salt to taste

Method
 

  1. Wash the bitter gourd and onion thoroughly and slice them. Keep aside.
  2. Take a pan and add oil. Add curry leaves to the oil.
  3. Add the sliced bitter gourd and cover with lid. Cook for 5 min in low heat.
  4. After 5 min , turn the heat to medium. Add onions, turmeric, salt, and jaggery. Mix well.
  5. Fry for 10 min and add tamarind pulp. Cook until done.
  6. Add chilli, cumin and coriander powders. Mix well and fry for 5 min.
  7. Serve hot with plain rice or rasam rice and ghee.
