Spicy chicken fry

Spicy chicken fry from southern state of Andhra is a very easy dish to make and commonly made for Sunday lunch. Its very delicious and is a favorite of all.

Ingredients
  

  • ½ kg chicken cut into medium sized pieces
  • 2 medium sized onion finely chopped
  • 2 green chillies slit and cut
  • 2 tsp ginger garlic paste
  • ½ tsp turmeric powder
  • 2 ½ tsp red chilli powder
  • 2 tsp coriander powder
  • 1 tsp garam masala
  • Salt to taste
  • 2 sprig of curry leaves
  • ¼ cup chopped coriander leaves
  • 50 g yogurt
  • 5 Tbsp oil

Method
 

  1. Wash and rinse the chicken thoroughly and transfer into a big bowl.
  2. To the chicken, add 1 Tbsp salt, 1 Tbsp red chilli powder, ¼ tsp turmeric powder, 1 tsp ginger garlic paste, and yogurt. Mix well.
  3. Marinate for 30 minutes to one hour.
  4. Take a pan and heat oil.
  5. Add chopped onions and green chillies and fry them until they become soft.
  6. Add salt, turmeric powder, ginger garlic paste and sauté till the raw flavor is gone.
  7. Add red chilli powder 1½ Tbsp and mix well.
  8. Add the marinated chicken and mix well.
  9. Cover and cook for 15 minutes on medium flame. Mix in between.
  10. Cook until the water evaporates and the oil starts to ooze out.
  11. Add coriander powder and garam masala. Cook for 5 more minutes on high heat mixing continuously.
  12. Turn off the heat, garnish with coriander leaves.
  13. Server hot with sambar rice or roti.
