Apple and cranberry sauce

I always make some cranberry sauce in advance for Christmas. This year I made apple and cranberry sauce which goes well both with poultry and pork so will last over the winter festivities!

Ingredients
  

  • 2 Bramley apples
  • 200 g fresh cranberries
  • 50 ml cider
  • 2 Tbsp muscovado sugar
  • 1 star anise
  • Maple syrup or honey to taste

Method
 

  1. Peel, core and roughly chop the apple.
  2. Put the apple, cranberries, cider, sugar and star anise into a heavy-based pot then bring the boil and gently simmer over low heat for 15-20 minutes until you get a thick sauce.
  3. Turn off the heat and let it cool. Taste, add some honey or maple syrup if it’s not sweet enough.
  4. Chill in the fridge until needed.
