Goat’s cheese and red pepper egg muffins

These low-carb goat’s cheese and red pepper egg muffins are perfect for a light brunch or lunch, served with a crispy salad. Alternatively, serve them as party nibbles or picnic snack – or take them with you to work in your lunchbox. They are super easy to make, delicate and delicious.

Ingredients
  

  • 4 large eggs
  • 50 g goats cheese
  • 2 Tbsp chopped chives
  • 1 grilled/roasted red pepper
  • Salt and pepper
  • Butter or oil
  • Chopped chives to garnish

Method
 

  1. Preheat the oven to 180°C.
  2. Grease a 6 hole muffin tin with oil and butter.
  3. Chop the bell pepper into small bits.
  4. Whisk the eggs with the chives and 4 pinches of salt. Season with ground pepper.
  5. Divide the egg mixture between the muffin holes. Drop a few pieces of the chopped peppers into each hole, then crumble some goat’s cheese on top – they will sink into the egg mixture.
  6. Put the tin in the oven and bake for about 20 minutes until golden.
  7. Let them cool in the tin (they will collapse a bit) then transfer them to a plate.
  8. Serve warm or at room temperature.
