Baked cauliflower with chickpeas

If you’re after an interesting, spiced side dish to go with your roast or would like to have a delicious vegan meal, try this baked cauliflower with chickpeas! It’s so easy to make and it’s so delicious yet filling! You can serve it with a dollop of yogurt or raita, if you like – I served it with brown basmati rice.

Ingredients
  

  • 1 head of cauliflower
  • 1 can chickpeas 400g
  • 2 onions
  • 2 Tbsp oil or ghee
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp garam masala
  • ½ tsp turmeric

Method
 

  1. Preheat the oven to 180°C.
  2. Cut each onion into 4 wedges. Drain the chickpeas.
  3. Discard the outer, tough leaves of the cauliflower -set the tender ones aside.
  4. Tear or cut the cauliflower into florets, then place them into a large baking dish. Arrange the onion and the tender leaves between the florets, then scatter the chickpeas around them.
  5. Mix the oil with the spices, season with salt and pepper to your liking.
  6. Drizzle the oil mixture over the veggies and toss well.
  7. Bake for 35-45 minutes, until golden, stirring them a couple of times during thy cooking time.
  8. Serve warm.
