Andhra chicken fry

I was craving for something spicy and Andhra chicken fry will do the trick. This dish is easy to make, is spicy and tasty.

Ingredients
  

  • For marination:
  • 500 g chicken cut into medium sized pieces
  • 1 Tbsp salt
  • 1 Tbsp red chilli powder
  • ¼ tsp turmeric powder
  • 1 tsp ginger garlic paste
  • 1 cup yogurt
  • Other ingredients:
  • 2 medium onions finely chopped
  • 1 tsp ginger garlic paste
  • ¼ tsp turmeric powder
  • Tbsp red chilli powder
  • 2 tsp coriander powder
  • 1 tsp garam masala
  • 2 green chillies
  • 3 sprigs curry leaves
  • ¼ cup chopped coriander
  • salt as needed
  • 5 Tbsp oil

Method
 

  1. Wash and rinse the chicken pieces thoroughly.
  2. Marinate the chicken with 1 Tbsp salt, 1 Tbsp red chilli powder, ¼ tsp turmeric powder, 1 tsp ginger garlic paste, and yogurt for 30 min.
  3. Take a pan, add chopped onions and green chillies and fry them until they become soft.
  4. Add salt, turmeric powder, ginger garlic paste and sauté till the raw flavor is gone.
  5. Add the chicken marinade and remaining red chilli powder. Mix well.
  6. Cover it with lid and keep mixing gently in between. Cook until the chicken is done and oil oozes out at the sides.
  7. Add coriander powder, curry leaves and garam masala. Cook for 5 more minutes on high heat mixing continuously.
  8. Turn off the heat and garnish with chopped coriander leaves.
  9. Serve hot with roti or rice and sambar.
