Beef and chicken liver burger

Chicken liver goes really well with beef (for example in Bolognese sauce) so I’ve decided to add some to my burger patties. You can serve this beef and chicken liver burger the usual way – in a bun and/or with chips, or just with salad and/or  baked sweet potato chips for a healthier version.

Ingredients
  

  • 450 g minced beef
  • 200 g organic chicken liver
  • 1 small red onion peeled and chopped
  • 1 garlic clove chopped
  • 1 Tbsp rosemary leaves
  • 1 Tbsp thyme leaves
  • 1 teaspoon ground black pepper
  • 1 teaspoon sea salt

Method
 

  1. Put the onion and garlic in a small food processor. Whiz until finely chopped, then add the herbs and liver. Pulse until get a thick paste.
  2. Put the minced beef in mixing bowl. Add the liver paste, salt and pepper and combine well.
  3. Rest for about 30 minutes, if time allows.
  4. Divide the mixture into 6 equal portions and form patties. (Add some chickpea flour, egg or ground flaxseeds if the mixture hasn’t combined properly).
  5. Pan-fry or grill for about 5 minutes on each side.
  6. Serve with condiments, side dishes, buns etc to your liking.
