Bolognese Sauce
This is my take on the classic Bolognese Sauce, with some healthy vegetables disguised to fool fussy eaters. It’s a real family favourite! The large quantities I’ve used are because it’s great to freeze several portions for using when you’ve not got anything else available and you want something quick, hot & hearty. You can reduce them all down proportionately if you wish.
Method
- Put all the mince into a large heavy bottomed casserole and heat over a medium heat for about 10 minutes to brown then pour off the excess fatty juices and set aside the meat in a large bowl.
- Heat the oil in the casserole and sauté all the chopped vegetables, mushrooms and herbs for 5 minutes before returning the meat.
- Stir everything together then blend in the tomatoes & wine. Crumble the stock cubes into ½ cup of boiling water and add to the pot with seasoning.
- Serve with whatever pasta you prefer, sprinkled with parmesan cheese.
