Chipotle steak with salsa

Beef steaks are perfect for quick midweek meals or weekend grilling, BBQs. This spiced, Mexican-style chipotle steak with salsa is ready in just 10 minutes! It’ super simple yet really tasty!  Serve tucked in a flatbread, tortilla wrap or with a crispy salad.

Ingredients
  

  • 1 large minute steak or matured sirloin
  • 1 Tbsp chipotle paste
  • Salt and pepper
  • For the Salsa:
  • 1 handful ripe cherry tomatoes or 2 medium tomatatoes
  • 1 red onion
  • ½ tsp cumin powder
  • 1 Tbsp chipotle paste
  • 1 handful fresh coriander leaves chopped
  • Salt &pepper
  • 1 lime

Method
 

  1. Pat-dry the steak. Rub the chipotle paste all over and rest unti you make the salsa.
  2. Cut the cherry tomatoes in half, slice the onion.
  3. Heat a spoonful of oil in a frying pan and sauté the onion until soft. Add the tomatoes and cumin, cook for a couple minute, stirring. Add the lime juice and Chipotle paste and cook for 5 minutes under cover.
  4. When the tomatoes are tender and about to collapse, stir in the choppedcoriander, season with salt &pepper. Put the lid on, turn off the heat and rest.
  5. Meanwhile, oil & heat a griddle pan or turn on your BBQ. Season the steak, then cook for 2-3 minutes on each side to your liking. (Minute steaks need even less time!).
  6. Rest the steak for a couple of minutes on a plate (covered with another plate) then serve with the warm salsa and a squeeze of lime juice. Garnish with fresh coriander leaves.
